Seyval Blanc

Usually produced with just a touch of sweetness with an excellent sugar-acid balance.  Crisp and light to medium in body with hints of apple, melon, and citrus. 

French-American Hybrid


Chambourcin

Rich in color and medium bodied, similar to a Cabernet Franc only with less aroma. 

Pinot Noir

Light to medium bodied, flavors of cherry, clove spice, and smoke hints.  Has less tannins and pigments than cabernets.

Cabernet Franc

Aromatic and light in color, body, and tannins than Cabernet Sauvignon.  Fruit tends to ripen in a cooler climate which produces medium bodies wines with forward fruit.

Chancellor

Deep in color and well balanced.  Typically used for blending

Baco Noir

Medium to full bodied and fairly acidic. Typically smokey with hints of black pepper and a deep color.  This wine benefits from aging.  

Vincent

Typically produces a dark red wine with a velvety character.   

Brandy

This is a spirit made by distilling wine and usually contains 35 - 6-% alcohol.  It is carmel in color and gets this way due to the fact that it ages in oak barrels. The wood color and flavor seeps into the liquid.  

Tequila

Made from distilling juices of the Blue Agave plant (similar to Aloe plant), primarily from fields surrounding the Mexican city of Tequila where more than 300 million plants are harvested each year.  It has a unique flavor that can not be found anywhere else. Examples:  Patron, Jose Cuervo

Lemberger

Produces a light bodies smooth wine with hints of pepper.

Cayuga White

This grape was developed in the Finger Lakes.  It has a fruity flavor with a delicate aroma.  Medium bodied and very well balanced.  Often produced sweet. 

Niagara

Noticeably grapey flavor and aroma.  Usually finishes sweet to semi-sweet.  Often referred to as "grapes in a glass"

Cabernet Sauvignon

Notes of black cherry and currant, it is rich, medium to full bodied with high tannins.  This wine ages very well. 

Diamond

a light bodied wine with lots of fruity flavor and aroma. 

Scotch

A type of whiskey made in Scotland that has strict law requirements in order to carry the name.  It is made from distilled malted barley, wheat, or rye.  It must be aged in oak barrels for at least 3 years and 1 day.  Examples:  Johnny Walker, Glenfiddich

Bourbon

This is a type of American Whiskey that is distilled using primarily corn and then barrel aged.   Examples: Knob Creek, Wild Turkey, Evan Williams, Maker's Mark

Vignoles

Typically produces a clean, crisp wine.  This is very well balanced and usually used for sparkling and ice wines.

Chardonnay

Buttery, creamy, with hints of apple, lemon, and pineapple.  Medium-dry and full bodied.  If this wine is oak aged, it will have hints of vanilla, butterscotch, and smoke.  This is one of the few wines that can be aged for over a decade.

Traminette

A hybrid of gewürztraminer with similar characteristics but more winter hardy.  Known for its spicy character and fragrant floral aroma.  

Isabella

A red grape with grapey flavor and a musky aroma.  Flavors to strong to make a red wine, it is often pressed to produce a white wine or a Rose.

Gamay

Light bodied with fresh fruity cranberry flavors; tangy.  Often produces wine that is meant to be drunk young (Beaujolais Nouveau)

Catawba

Both high in sugar and acid, it can be made to balance well.  Typically produced sweet and often as a Rose.  Clean taste and spicy aroma.

This is another grape developed in the Finger Lakes.  Fruity flavor with flowery aroma.

Riesling

One of the premier grapes grown in the finger lakes.  This has fruity flavors of peaches, honey, and tropical fruit with a flowery bouquet and a long finish.  Light to medium bodied and produces a wide range of sweetness.  Very popular for making late season and iced wines.  

Gewürztraminer

This is the German word for "spiced".  It is crisp with spicy flavors of cloves and nutmeg with a flagrant floral nose.  It varies in sweetness from dry to semi-sweet.  Typically produced with higher alcohol content than other white wines.  

Vodka

Made from distilling grains or potatoes although some modern brands use fruits and sugars.  Example: Grey Goose, Absolut

Marechal Foch

Deep pigmented with a velvety fruity nose.  Flavorful yet simple.  

Whiskey / Whisky

Made by fermenting a mash from a variety of different grains (barley, corn, rye, wheat).  It is aged in wooden casks made of charred white oak which gives it some flavor and color.  WhiskEy is only made in Ireland while Whisky can be made world wide.  Examples Whisky: Jack Daniels.  Examples of Whiskey: Jameson

Delaware

High sugar content with a grapey flavor and aroma.  Often finished semi-sweet and is frequently used as blends in Champagne.

Vidal Blanc

High in acid so it typically finishes semi-dry to cover this.  Similar in characteristics to Riesling.  

Gin

This is a spirit that gets is flavor from Juniper berries, meaning it tastes piney.  examples:  London, Beefeaters, Tanqueray.  

Rum

A distilled alcoholic beverage made from sugarcane byproducts such as molasses.  It is distilled in this state and comes out as a clear liquid, gaining its color in the wood barrel aging process.   Examples, Captain Morgans and Bacardi.

Jagermeister

Made from a secret combination of 56 herbs and spices and means "master of the hunt" in German.  It has a black licorice flavor and generally used for an after dinner drink.
